Wash the tomatoes, cut out the green stalks and cut into pieces. Peel and cut the onions into rings.
Mix the ingredients into a bowl with the herbs and season liberally to taste with pumpkin seed oil PGI, vinegar, salt and pepper.
Try and get different coloured tomatoes from the market as they make the salad look more interesting.
Serve the tomato salad in bowls and garnish with a bouquet of fresh herbs.Print recipe
