Recipe: Scarlet runner bean spread with diced potatoes


cooks in 10 minutes

1. Peel the potatoes, dice finely and cook in lightly salted water until soft. ash the tomatoes and cut into small cubes.

2. Pour the scarlet runner beans from the can and blend with a hand-held blender to form a fine purée.

3. Mix together all of the ingredients well and add herbs and spices to taste. Add the scarlet runner bean spread to toasted wholegrain white bread and garnish.
