Pumpkin seed oil parfait with strawberry ragout

- Beat the egg and egg yolk with the sugar over a water bath until creamy to form a firm mixture. Carefully stir in the pumpkin seed oil and pumpkin seed brittle. Finally, fold in the whipped cream. Pour into moulds (e.g. silicon muffin cases or coffee cups) and leave in a freezer to infuse for a few hours or overnight.
- To serve, submerse the moulds containing the parfait in hot water briefly (to make the parfait easier to remove) and serve on plates with the strawberry ragout.
This is my tip
Purée 100 g of strawberries with the sugar (if using frozen strawberries, leave to defrost first). Dice the remaining strawberries and stir into the strawberry sauce. The ragout can also be refined with mint or basil (cut into fine strips).
