Pumpkin seed oil parfait with strawberry ragout

Strawberry ragout

  • 100 g strawberries (fresh or frozen, for puréeing)
  • 125 g strawberries (fresh if possible)
  • 1 tbsp sugar

Pumpkin seed oil parfait

  • 1 egg
  • 1 egg yolk
  • 100 g sugar
  • 40 ml Steirerkraft pumpkin seed oil PGI
  • 200 ml whipping cream
  • 2 tbsp Steirerkraft pumpkin seed brittle

Preparation

  1. Beat the egg and egg yolk with the sugar over a water bath until creamy to form a firm mixture. Carefully stir in the pumpkin seed oil and pumpkin seed brittle. Finally, fold in the whipped cream. Pour into moulds (e.g. silicon muffin cases or coffee cups) and leave in a freezer to infuse for a few hours or overnight.
  2. To serve, submerse the moulds containing the parfait in hot water briefly (to make the parfait easier to remove) and serve on plates with the strawberry ragout.
