Dough

  • 3 eggs
  • 120 g icing sugar
  • 120 g flour
  • 1/16 l Steirerkraft pumpkin seed oil PGI
  • 1 tsp baking powder

Creme

  • 300 g curd
  • 1 medium apple
  • 200 ml whipped cream
  • 6 tbsp icing sugar
  • Orange juice
  • Orange marmalade

Decoration

  • Steirerkraft natural pumpkin seeds

Preparation

This is the winning recipe from the Steirerkraft cooking competition 2014 on ichkoche.at

  1. Separate the eggs. Beat the egg whites until stiff and slowly fold in the icing sugar. Then mix the pumpkin seed oil and flour (mixed with baking powder) into the egg mixture. Add the mixture to a square baking tin or large cake tin and bake at 180°C.
  2. For the cream stir the curd until smooth, add the sugar, orange juice and finely grated apple and fold in the whipped cream. Then spread the orange marmalade onto the chilled pastry base, add the crème and smooth out evenly. Finally drizzle pumpkin seed oil onto the apple & pumpkin seed cake, decorate with pumpkin seeds and cut into pieces.
