Sweet and Sour Scarlet Runner Bean Tofu with Rice and Vegetables
Vegan and creative – sweet and sour scarlet runner bean tofu.

Tofu
- 100 g Steirerkraft Scarlet runner beans dried
- 250 ml water
- 1 clove garlic
- Salt
- Pepper
- 6 tbsp corn starch
- 5 tbsp sunflower oil
Sweet and Sour Sauce
- 140 ml water
- 2 tsp corn starch
- 2 tsp sunflower oil
- 2 cloves garlic (chopped)
- 1 tsp ginger (finely chopped)
- 1/2 tsp chilli flakes
- 2 tbsp tomato paste
- 2 tbsp cane sugar (or more to taste)
- 1 tbsp soy sauce
- 1 tbsp Steirerkraft Apple vinegar Premium
To Serve
- 400 g rice (cooked)
- Seasonal vegetables (optional)
Tofu Preparation
- The day before, soak the scarlet runner beans in plenty of water and leave them to soak at room temperature for 24 hours.
- The next day, drain the beans and blend them with the water, salt, pepper and chopped garlic in a blender until as smooth as possible. This may take a little time.
- Transfer the mixture to a frying pan and heat slowly over medium heat. Cook until it thickens and sets. It is ready when it has the consistency of a thick paste, after about 10–15 minutes. Transfer to a shallow container, spread evenly and refrigerate until completely chilled.
- Once the mixture is firm, turn it out of the container and cut into even cubes. Place the cubes in a bowl with the corn starch and toss well until coated on all sides.
- Heat a little oil in a frying pan and fry the tofu cubes on all sides. Transfer to a bowl and set aside.
Sweet and Sour Sauce Preparation
- Mix the corn starch with the water until smooth and set aside.
- Heat the oil in a frying pan. Add the garlic, ginger and chilli flakes and sauté briefly. Add the remaining ingredients and the corn starch mixture. Bring to the boil and cook until the sauce thickens slightly, then remove from the heat.
- Add the tofu cubes to the sauce and stir until evenly coated.
- To serve, place some cooked rice in a bowl and arrange the tofu cubes on top.

Seasonal vegetables make a great addition – simply grill, fry or cook them briefly before serving.
