Styrian Scarlet Runner Bean Shakshuka
An oriental vegetable stew with eggs cooked right in the sauce – simple to prepare and full of flavour.

Shakshuka
- 1 white onion
- 2 cloves garlic
- 1 red pepper
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika powder
- 1/2 tsp chilli powder
- 800 g tomatoes or 2 cans peeled tomatoes
- Salt
- Pepper
- 425 ml Steirerkraft Scarlet runner beans ready-to-eat
- 4 eggs
- 120 g diced bacon
Garnish
- 1 tbsp Steirerkraft Pumpkin seeds natural
- 1 tbsp Steirerkraft Pumpkin seeds coarsely chopped
- 1 handful chopped parsley
Preparation
Preheat the oven to 180 °C top/bottom heat. Peel and finely chop the onion and garlic. Heat the olive oil in an ovenproof frying pan and sauté the onion and garlic.
Wash and finely dice the red pepper, add it to the pan and sauté briefly. Add the spices and toast for a short time. Stir in the washed and halved fresh tomatoes or the canned tomatoes and allow the mixture to reduce slightly. Season with salt and pepper. Drain and rinse the scarlet runner beans, then stir them into the sauce.
Using a spoon, make four wells in the thick sauce. Crack the eggs one at a time and carefully pour them into the wells. Place the pan in the hot oven and bake for about 10 minutes.
Meanwhile, fry the diced bacon in a separate pan until crispy. Remove the shakshuka from the oven and sprinkle with the crispy bacon, pumpkin seeds and parsley. Best served with fresh white bread.
Don't tell anyone
For a vegetarian version, simply replace the bacon with crumbled sheep’s cheese.
