Styrian Flammkuchen
Our homemade Flammkuchen with Steirermehl needs just a few ingredients and can be topped however you like – classic, vegetarian, or creative with fresh vegetables and tangy cheese. Perfect for a relaxed evening when things need to move quickly, but something a little special should still land on the table.

Main Courses with Steirermehl
Flammkuchen Dough
- 220 g Steirermehl
- 1 tsp salt
- 1 pinch sugar
- 2 tbsp olive oil
- 100 ml water
Vegetarian Topping
- 1 pear
- 100 g feta cheese
- 250 g sour cream
Classic Topping
- 3 tbsp diced bacon
- 2 spring onions
- 250 g sour cream
Preparation
Combine all the dough ingredients in a mixing bowl and knead for 5–10 minutes into a smooth dough. If needed, add a little more or less water so the dough is neither too dry nor too sticky. Cover and let the dough rest for about 30 minutes.
Preheat the oven in good time to 220–250 °C (430–480 °F) conventional heat. Line a baking sheet with parchment paper.
Roll out the dough very thinly on a lightly floured surface and shape into one or two Flammkuchen bases, depending on size.
Top the bases as desired (e.g. with vegetables or cheese) and carefully transfer to the prepared baking sheet.
Bake in the preheated oven for 7–10 minutes, until the edges are crispy and golden brown. Finish with fresh rocket, if desired.
Don't tell anyone
For an especially crispy Flammkuchen, preheat the oven well and roll the dough out as thinly as possible. Also, don’t pile the topping on too thick, so the base stays nice and crispy instead of turning soggy while baking. Add fresh rocket only after baking, so it keeps its aroma and freshness.
