Savoury Fortune Cookies with Pumpkin Seeds
Crispy, savoury, and full of luck – these savoury fortune cookies make for a delightful start to the new year.

Fortune Cookies
- 250 g plain flour
- 150 g mountain cheese (or Asmonte / Parmesan), finely grated
- 50 g Steirerkraft ground pumpkin seeds
- 150 g butter (cold)
- 1 egg
- 1 egg white
- 1 tsp salt
- 1 tsp paprika powder (sweet)
For brushing
- 1 egg yolk
- 1 tbsp milk
- 1 pinch salt
For sprinkling
- 2 tbsp Steirerkraft coarsely chopped pumpkin seeds
- sesame seeds
- poppy seeds
- coarse salt (to taste)
Preparation
Finely grate the mountain cheese. Mix the flour, ground pumpkin seeds, baking powder, salt, and paprika powder in a bowl.
Cut the cold butter into cubes, add to the dry ingredients together with the egg and egg white, and quickly knead into a smooth shortcrust dough. Wrap the dough in plastic wrap and let it rest in the fridge for about 30 minutes.
Roll out the chilled dough to about 7 mm thick. Cut out shapes of your choice with cookie cutters (e.g. lucky stars or clovers). Use a wooden skewer to poke a small hole in the centre – this is where the fortune message will go later.
Whisk together the egg yolk, milk, and salt, brush over the cookies, and sprinkle with chopped pumpkin seeds, sesame seeds, or poppy seeds. Place on a baking sheet lined with parchment paper and bake at 190 °C (375 °F) conventional heat for about 20 minutes, until golden brown.

Don't tell anyone
