Protein Pancakes with Scarlet Runner Beans & Apple Compote

Ingredients
- 150 g Steirerkraft Styrian scarlet runner beans PDO (cooked/ready-to-eat)
- 150 g Skyr
- 80 g plain wheat flour
- 2 eggs
- 1 pinch salt
- 1/2 tsp baking powder
- oil for frying
To serve
- 3–4 tbsp cream cheese or yogurt
- apple compote
Preparation
Drain the scarlet runner beans. Crack the eggs into a tall mixing cup.
Add the scarlet runner beans, Skyr, flour, baking powder, and salt, and blend with a hand blender into a smooth, thick batter. If the batter is too firm, stir in a splash of milk.
Heat a little oil in a pan. Add the batter in portions (about 1 tbsp per pancake) and fry over medium heat for about 2 minutes per side, until golden brown. Makes about 12 small pancakes.
Serve the pancakes with a dollop of cream cheese or yogurt and apple compote.
Don't tell anyone
Let the batter rest for 5 minutes after blending – it will noticeably thicken, helping the pancakes hold their shape better in the pan. Fry over medium heat and only flip once small bubbles form on the surface.
