Potato and Pumpkin Seed Wrap with Mediterranean Chicken and Caesar Salad
There’s simply no getting around this potato and pumpkin seed wrap. Perfect paired with Caesar salad and chicken.

Potato Wrap
- 6 large potatoes (waxy)
- 70 g Steirerkraft coarsely chopped pumpkin seeds
- 150 g mountain cheese (grated)
- salt
- pepper
Caesar Salad
- 1/2 head iceberg lettuce
- 200 g natural yogurt
- 200 g sour cream
- 1 tbsp mustard
- 1 tsp Worcestershire sauce
- 50 g Parmesan (grated)
- 1/2 bunch chives
- 2 tomatoes (for topping)
- salt
- pepper
Mediterranean Chicken
- 2 chicken breasts
- paprika powder
- curry powder
- salt
- pepper
Preparation
Peel the potatoes and slice them thinly, ideally using a mandoline. Arrange the slices, slightly overlapping, on a baking sheet lined with parchment paper or lightly oiled, and season with paprika powder, salt, and pepper. Sprinkle with pumpkin seeds and cheese, then bake in a preheated oven at 190 °C (375 °F) for 20 minutes.
Meanwhile, prepare the Caesar salad. Mix all the ingredients (except the lettuce) together and season with salt and pepper. Cut the iceberg lettuce into bite-sized pieces and toss with the Caesar dressing.
Season the chicken breasts with paprika powder, curry powder, salt, and pepper, and sear in a pan with hot oil until golden brown and cooked through. Alternatively, the chicken can be finished in the oven after searing – simply let it rest in the oven at 170 °C (340 °F) for 10 minutes.
Once the potato slices and chicken are cooked, it’s time to assemble. Lift the potato wrap off the baking sheet, flip it, and cut it in half down the middle. Fill as desired with Caesar salad, tomatoes, and chicken sliced into strips. Roll up and enjoy.
Don't tell anyone
For a vegetarian version, tofu works just as well instead of the chicken fillets. Simply season and sear to taste.
