Parmesan and Pumpkin Seed Cracker Spiders with Scarlet Runner Bean Hummus

Cracker
- 45 g Parmesan (freshly grated)
- 10 g Steirerkraft coarsely chopped pumpkin seeds
- 10 g Steirerkraft natural pumpkin seeds
- 1 pkg pretzel sticks (as spider legs)
Scarlet Runner Bean Hummus
- 250 g Steirerkraft Styrian scarlet runner beans PDO, ready-to-eat (= 1 can, drained)
- 100 g curd cheese or 1 tub crème fraîche
- 5 tbsp Steirerkraft Pumpkin Seed Oil PGI
- 1 clove garlic
- salt, pepper, cumin
Preparation
Finely grate the Parmesan. On a baking sheet lined with parchment paper (or a microwave-safe plate lined with parchment), place eight small mounds of Parmesan (about 1 tbsp each) and press down lightly. Distribute the pumpkin seeds over the mounds. Leave enough space between the mounds, as the crackers will spread while baking.
Bake in a preheated oven at 180 °C (355 °F) conventional heat for about 10 minutes, until golden brown. Remove and let cool briefly on the baking sheet until the crackers firm up.
While baking, prepare the scarlet runner bean hummus. Purée all the ingredients with a hand blender or high-speed blender and season with the spices. If the mixture is too thick, add a little more pumpkin seed oil.
Spread the cooled crackers with a little hummus and sandwich them together. Insert four short pieces of pretzel stick on each side – and your giant spider is ready.
Don't tell anyone
To get nice, round mounds on the baking sheet, we made ourselves a funnel. To do this, cut off most of a paper cup, including the base, straight across, leaving only about a 2 cm high funnel. This lets you place even portions on the sheet and press them down evenly.
