Ingredients: 500 g all-purpose flour (our favourite from Farina); 20 g fresh yeast (or 1 pkg dried yeast); 1 tsp salt; 3 tbsp Steirerkraft Pumpkin Seed Oil PGI; 3 tbsp Steirerkraft coarsely chopped pumpkin seeds; 300 ml water (lukewarm); 8 tsp Steirerkraft pumpkin seed pesto; 8 tsp tomato paste; 8 small mozzarella balls; 1 egg (for brushing); kitchen twine, for tying; pretzel sticks and fresh basil leaves, for decoration

These mini pumpkin pizza rolls taste great warm or cold – not just at Halloween. But especially then.

Dough

500 g all-purpose flour (our favourite from Farina)
20 g fresh yeast (or 1 pkg dried yeast)
1 tsp salt
3 tbsp Steirerkraft Pumpkin Seed Oil PGI
3 tbsp Steirerkraft coarsely chopped pumpkin seeds
300 ml water (lukewarm)

Filling

8 tsp Steirerkraft pumpkin seed pesto
8 tsp tomato paste
8 small mozzarella balls

Additionally

1 egg (for brushing)
kitchen twine, for tying
pretzel sticks and fresh basil leaves, for decoration

Preparation

For the yeast dough, combine all the ingredients in a large bowl and mix with a mixer (dough hooks) or stand mixer into a smooth dough. Cover and let the dough rise for 1 hour.
After rising, roll out the dough to about 1/2 cm thick and cut out circles using a large round cutter (e.g. a small bowl), about 12 cm in diameter. Spread a little tomato paste in the centre, add a dollop of pesto on top, and finish with a mozzarella ball.
Shaping the pumpkins takes a bit of finesse: gently press the dough together around the filling and twist the top slightly to form small pouches. Loosely tie kitchen twine around the pouches several times to create the typical pumpkin shape.
Place the pizza pumpkins on a baking sheet lined with parchment paper, brush with beaten egg, and bake in a preheated oven at 220 °C (430 °F) conventional heat for about 15 minutes, until golden brown.
Once cooled, carefully remove the twine. Insert half a pretzel stick into the centre as a pumpkin stem and decorate with a fresh basil leaf.
