Lettuce Wraps with Scarlet Runner Bean Paste

This wonderful summer dish is the perfect excuse for a get-together with friends. Whether vegan, vegetarian, or a bacon lover, there’s something for everyone – and everything is freely combinable. Scarlet Runner Bean Paste

  • 400 g Styrian scarlet runner beans PDO, ready-to-eat
  • 400 g small white beans
  • zest of half a lemon
  • juice of two lemons
  • 1 clove garlic
  • 1 handful parsley
  • 40 ml neutral vegetable oil
  • 40 ml Styrian Pumpkin Seed Oil PGI
  • 100 g Steirerkraft chopped pumpkin seeds
  • salt, pepper

Possible Toppings

  • 250 g smoked tofu
  • 200 g halloumi
  • 200 g bacon (small diced)
  • 100 g mushrooms (e.g. king oyster mushrooms, button mushrooms, small crisp chanterelles)
  • 150 g Steirerkraft natural pumpkin seeds
  • 3 stalks celery
  • 4 medium carrots
  • 1 bunch radishes
  • 100 g smoked trout fillet
  • 1–2 spring onions
  • 100 g pickled capers
  • 1 organic lemon
  • oil for frying

Lettuce Wraps

  • 2 heads Graz butterhead lettuce

Preparation

  1. It’s best to use a lettuce with large, individual leaves. They form the base of the wraps and need to hold up a little. Graz butterhead lettuce, for example, works wonderfully.

    Preparation ahead of time

    • Separate the lettuce leaves individually and wash them. Then drain well using a salad spinner or a colander, wrap in a damp kitchen towel, and store chilled until ready to assemble at the table.
    • For the scarlet runner bean paste, blend the scarlet runner beans, white beans, lemon juice, lemon zest, garlic, parsley, salt, pepper, oil, and pumpkin seed oil in a food processor or blender into a fine paste. Then stir in the chopped pumpkin seeds and season again to taste.
  2. Assembling at the table

    At the table, the lettuce leaves are carefully spread with the scarlet runner bean paste, forming the base of the wraps. The toppings can be freely combined according to season and personal taste. Once you’ve added 3–4 toppings to a spread leaf, fold it up from the bottom, then from the left and right. Take a bite and enjoy!

  3. A few topping ideas:

    • Cut smoked tofu or halloumi into small cubes, sear in hot oil, and season with salt, pepper, and lemon juice.
    • Fry bacon cubes until crispy.
    • Quarter or eighth mushrooms (e.g. king oyster mushrooms) depending on size and sear in hot oil. Season with salt and pepper.
    • Salt pumpkin seeds and toast them in a pan.
    • Slice celery stalks.
    • Coarsely grate carrots. (The fresher they’re grated, the better.)
    • Quarter radishes.
    • Halve small tomatoes.
    • Steam green beans.
    • Break smoked trout into pieces.
    • Slice spring onions thinly.
    • Slice a lemon and cut into eighths, then sear briefly in a little oil.
    • Add caper berries for garnish.

    Almost any vegetable works well in these lettuce wraps. Steirerkraft recommends using regional, seasonal ingredients – not only are they fresh at the market, but they also taste best when in season.

Don't tell anyone

All ingredients can be well prepared in advance and stored covered in the fridge until it’s time to assemble the wraps at the table.
