Caramelized Grilled Pineapple with Vanilla Ice Cream and Pumpkin Seed Oil Topping

Our grilling session at the Weingut Krispel ended on a high note with caramelized pineapple slices. This dessert is the perfect finale for any barbecue — fruity, sweet, and with a hint of the exotic. Grilling brings out the full flavor of the pineapple, while the caramelized sugar creates a crispy crust. Served with a vanilla ice cream and pumpkin seed oil topping, it becomes a truly refined dessert.
- Peel the pineapple, cut it into slices about 1.5 cm thick, and remove the core from the center. Roll each slice in powdered sugar until evenly coated, then place them on the grill.
- Lightly grease the grill with a neutral oil beforehand. Grill the pineapple slices on both sides until the sugar has melted and a caramelized crust has formed.
- To serve, place the grilled pineapple slices in a bowl and set a scoop of vanilla ice cream in the center. Drizzle with a splash of lemon juice and a bit of pumpkin seed oil. For the finishing touch, sprinkle with chopped pumpkin seeds and garnish with fresh mint leaves.

We love to pair this dessert with a light, fruity Frizzante Rosé. It’s refreshing and beautifully highlights the tropical notes of the dish.
