Beetroot Carpaccio with Fried Scarlet Runner Beans & Lamb’s Lettuce
A highlight both to look at and to taste – beetroot carpaccio with fried scarlet runner beans and lamb’s lettuce, perfect for the festive table.

Beetroot Carpaccio
- 4–5 beetroots, cooked
- 5 tbsp Steirerkraft Pumpkin Seed Oil PGI
- 2 tbsp Steirerkraft Apple Balsamic Vinegar
- a little horseradish (freshly grated)
- salt, pepper
Fried Scarlet Runner Beans
- 100 g Steirerkraft Styrian scarlet runner beans PDO, ready-to-eat (drained)
- 4 tbsp flour
- 1 egg
- 5 tbsp breadcrumbs
- vegetable oil for frying or brushing
Lamb's Lettuce
- 2 handfuls lamb's lettuce
- 3 tbsp Steirerkraft Pumpkin Seed Oil PGI
- 2 tbsp Steirerkraft Apple Vinegar
- salt, pepper
Preparation
Cut the cooked beetroots into very thin slices and arrange in a circle on four plates. Marinate with salt, pepper, apple vinegar, and a fine drizzle of Steirerkraft pumpkin seed oil.
Drain and rinse the ready-to-eat scarlet runner beans. Coat them in flour, beaten egg, and breadcrumbs. Brush with a little vegetable oil and air-fry at 180 °C (355 °F) for about 10 minutes, until golden brown. Alternatively, the scarlet runner beans can of course also be pan-fried in hot oil.
Meanwhile, wash and marinate the lamb’s lettuce.
Finally, place the lamb’s lettuce in the centre of the carpaccio, arrange the crispy fried scarlet runner beans on top, and finish with freshly grated horseradish. To finish, drizzle with a few drops of pumpkin seed oil.

Served warm, the fried scarlet runner beans taste especially flavourful and create a lovely contrast to the cool beetroot.
