with Steirermehl with pumpkin seeds
Apple Filling
- 4 apples (e.g. Elstar, Boskop)
- 50 g raisins or finely chopped dates (optional)
- 1 tsp cinnamon
- 2 tbsp brown sugar
Pumpkin Seed Crumble
- 100 g Steirermehl
- 100 g Steirerkraft coarsely chopped pumpkin seeds
- 100 g cold butter (cut into pieces)
- 50 g sugar
- 1 tsp cinnamon
- 1 pinch salt
- 1 tbsp Steirerkraft natural pumpkin seeds (for garnish)
Preparation
First, prepare the apple filling: peel the apples and cut into thin wedges or cubes. Mix with the cinnamon, sugar, and raisins or finely chopped dates, then transfer to a greased baking dish.
For the pumpkin seed crumble, mix the Steirermehl with the chopped pumpkin seeds, sugar, cinnamon, and salt in a bowl, then add the cold butter. Quickly work into a crumbly mixture using your hands or a pastry cutter.
Spread the crumble over the apple mixture in the dish and press down lightly. Bake at 180 °C (355 °F) conventional heat for about 30–35 minutes, until the crumble is golden brown and crispy.
The crumble tastes best served slightly warm, topped with vanilla ice cream. Finish with a drizzle of pumpkin seed oil and enjoy. Simply heavenly!
Don't tell anyone
Briefly sauté the apple cubes in a pan before baking – with a little butter, a splash of lemon juice, and optionally a dash of apple juice or rum. This lightly caramelises them, softens them more evenly, and develops a more intense aroma.
